Legal Question in Family Law in Florida

If my daughter gives my husband and me temporary custody of our granddaughter, does it have to be legalized in some way in order to put her on our insurance?

If you're talking about health insurance, it really depends on the insurance plan provider. Some require an actual court order re: temporary custody, and others may be fine with an affidavit giving you temp guardianship of your grand-child. I would try to add her and then see what they say.
