No Divorce-Child Custody

My wife has left and I am thinking of leaving the state to take a better job. Not wanting to start the whole divorce process yet is there some document that we both can sign that states that I have custody of the children? They live with me and I have been the primary caregiver for the past 5 or so years. I don't want my wife to come back later and say I took off with the kids. She knows my plans but I want to legally cover the bases.

You can have a custody agreement signed by both parties.
