Florida: In order for my son to be named the Dad on the birth certificate, does he have to sign anything?

His girlfriend gave birth 2 days ago and he's never signed anything. After 9 months of her claiming he is the Dad, I'm worried that she's not listing him on the birth certificate as the Dad.

I would be more concerned as to whether this is his child rather than have him sign a birth certificate stating that he is the father. I suggest you file a paternity suit and force her to do a DNA test with him before you worry about him signing his name. This child may not be his.
