Legal Question in Family Law in Florida
My husband and I are separated. However there is no "legal separation" process in Florida. We don't want to jump right away to a divorce. But I plan to move back closer to family in another state very soon. We have one child. I do not work at my husband's request. So here's my question.... can we put in writing our agreement for me to keep our child and him to continue to support us - we are both in agreement --- and can that keep us "covered" without actually filing any court documents (more or less a written contract/agreement) until/if we move on to a divorce?

You can file in the state of Florida for child support/custody without being divorced. I suggest you do so. Why? Well if you two get in an argument on any subject, guess who is going to get the short end of the stick.
