if a mom moves to a different state and leaves her son with her mom, does the father have the right to take the son?

In my area of the state, no judge would have a problem with it. Different judges may see it differently, though, since there isn't any exact law on the issue. You should sit down with a local lawyer and check, but I'm 99% certain the lawyer will tell you to go get your son.
