Legal Question in Family Law in Florida
During separation wife lived in the home. She lost her wedding ring during the separation. After mediation, I was given the home to move into and she move out. She left many items in the home stating she did not want them any longer (large items dining room table) and in the midst of moving in, I found the wedding ring. The divorce is final. She is threatening to file criminal and civil charges for the ring. Is she able to?

Anyone can file a criminal complaint, but will the police or state attorney take any action - probably not.
The wedding ring is hers, you gave it to her as a gift.
Unless your ex wrote to tell you she left remainder of the goods remaining in the home she did not want - then it will be hard for you to prove she gifted it back to you.
Look, aren't you just pulling her chain? Does the ring have any sentimental value to you or are you using it as a tool for retribution? Is it worth creating friction over it? Why not be the bigger person and admit you made a mistake and give her the ring.
give her the ring. It is just creating an albatross around your neck.
However, before you do - have your attorney draw up papers as to the items she left behind. Without documentation, she will just harass you in the future for this and that. so put it in writing and then when she signs, give her the ring.
