What should I do if my ex - wife switched a few internal pages of a child sharing agreement after i signed and notarized it, and then she submitted it to the courthouse without my kmowledge?

Can you prove that she switched the pages? Did you keep a copy? Why didn't you initial the pages? If you can't prove her fraud, you may be stuck with it.
