how do i counterclaim a motion for summary final judgement of foreclosure if I have a default on the mortgage company?

You go to law school. Seriously, you don't "counterclaim" a motion for summary judgment. You oppose it. You counterclaim the initial complaint.

I can't tell if the mortgage company defaulted in the lawsuit OR if you defaulted on the mortgage which led the mortgage company to file a foreclosure action against you.

I can't possibly explain to you in any meaningful detail how you oppose a motion for summary judgment. You file an opposition to the motion and memorandum of law in support. You go to court and argue against the motion.

I strongly suggest you get a lawyer to do this for you. Foreclosure actions are complicated, and I cannot imagine you will win (or even buy time) without a lawyer.
