Defamation

Was charged with grand theft in florida by ex emplyer, was arrested ,court and in the final pretrial conf. All charges were dismissed, can I sue for defamation of character?

Probably not. The police made the decision to arrest.

Maybe. You haven't given us enough information. Usually these types of lawsuits are for malicious prosecution.
