I need to file a suit against a person who owes me over $8,000. Can I file this suit myself. And if so where do I get the forms? Also, this person has moved to another state but still has a house here in Florida. Can I serve this person the papers in the other state? Also, are there companies that can server the papers for me.

You can go to http://www.myorangeclerk.com to download forms. In County Court, Civil Division, you can sue for up to $15,000. In small claims you can only sue for up to 5,000. You may proceed without an attorney.
You can serve the defendant in another state, and there are process server services you can hire for this.
You can do it yourself. The forms are at the courthouse. You can serve them in another state. Google "process server" and the state you need and you will find plenty of sources.
