Legal Question in Civil Litigation in Florida
I recently took our home builder to court and settled in mediation . It says in the paperwork written out by the mediator that "the payment releases the defendant of all claims" I know meaning we can't take them to court again. Well, in the settlement check we got today, the lawyer included paperwork they want us to sign and notorize and send back saying the same thing. Can they require that since it's already in the court paperwork?

The mediation agreement would control if it is complete. It is not unusual for a separate release to be signed. If you want your money and nothing else is being agreed upon, then just sign it.
