can the store charge you with shoplifting if they didn't catch you , but the other store did and they took the stuff back

First of all, stores do not charge you with shoplifting. The state attorney files criminal charges. If you have stolen from two stores, you may have committed two crimes, and you could be charged with both. However, it is possible that there are issues concerning whether your constitutional rights were properly observed and what evidence should be admissible against you. You should retain criminal defense counsel to defend you against any criminal charges.
