Hi . I am applying for adjustment of status. I'm married to a US CITIZEN. And we are having a joint sponsor. My question is once it's time for my immigration interview are both of my sponsors should be there?

No. Only you (the beneficiary/applicant) & your spouse (the petitioner) should attend the interview.
