If your fiance entered the country legally and has never been placed in removal proceedings, she should be able to adjust to that of a US permanent resident upon good faith marriage to a US citizen.

Have you not checked with your city licensing agency -- of course you will be able to obtain a marriage license -- so get it -- now, today. Once you are married, better file a one-step package for your wife's sake, and she can get legalized. You are together long enough that you should be certain if your marriage will last, and she can obtain her permanent residence in the U.S. Get going! Good luck and the best to both of you!

Yes, you can go ahead and get married and apply for an adjustment of status.
