Hi, I am here in the US as a tourist and have already overstayed for a year, I met a Dentist who is willing to sponsor me as a Dental Assistant, can i apply for a working visa?

No. If you overstay even one day, you cannot change status. If you leave the U.S. now, you will be barred for 10 years from re-entering. The only alternative you have, if you remain in the U.S., is to get a greencard through marriage to a U.S. citizen.
Also, most employment-based non-immigrant visas (TN, H-1B, E-3) require a Bachelor's Degree for entry into the field, so you would not qualify for an H-1B as a Dental Assistant.
