If I create a logo (as an independent contractor) for a company - who 'owns' the logo...me or the company?

Most attorneys would say it depends on what the underlying contract says. Generally when an independent contractor is hired (and paid) to create a logo, the end product belongs to the client - the company that hired you. Consult with an attorney in your area for more specific advice given your situation and facts.
