is it legal Not to pay someone the money that would have been paid for the employees health insurance if that employee chooses to opt out of the offered insurance? My employer paid me two years worth and then just stopped. He pays other employees health insurance at 100.00 month, but since I don't need the insurance he pays me nothing.

If you decide not to receive a benefit that is oferred by your employer, that does not entitle you to be paid for the not electing to receive the benefit. Example: some employers provide a gym for employees to use. If you don't go to the gym, the employer does not owe you the value of a gym membership.
