Legal Question in Employment Law in Florida

I am the executive secretary of a martial arts academy in Florida. An Assistant Coach decided to establish his own club - not the problem. The problem is that he illegally forged the signatures of 6 students/customers requesting immediate transfer of said students to his club. Although he did speak to a couple of them following class, he made false promises trying to ensure their defection. I have received verbal and written confirmation that this Asst. Coach did in fact forge their signatures. The Asst. Coach provided this forged document to the our parent national organization.

What are the legal term/s when an ex-volunteer employee steals your customers for their own use, makes false promises and illegally forges their names?

He may have had authority from the customer to sign the paperwork. Let's face it, if all he did was sign papers, the customer would still be showing up at your place, not his.
