I began working at a company
here in Florida 2.5 weeks ago.
On my first day I explained to
the supervisor that I had
arranged a trip to NY for 5 days
for my anniversary and a trip to
Central America for another 5
days. These were planned
much in advanced, flight and
hotel were already paid for.
During my 2 week training
period I continued to ask what
was the situation with these
dates I would be missing and
they would just tell me that
they would figure it out later.
Now that the trip is
approaching, I asked once
again and I was told that I
would need to find someone to
cover every single shift within a
2 hour period. Do they have
the authority to fire me even
though I told them about these
pre-planned trips 2.5 weeks
ago?

Unless this was a part of your agreement (and it does not sound like it was) then they can reequire you to get cover of fire you if you do not work as scheduled. "We'll deal with it later" is insufficient and, in any event, they did deal with it later. They are allowing you to leave, you just need to make arrangements to do so. It would have been best if you made the time away part of your contract, however, had you so insisted they may not have ever hired you.
