Can your employer ''wipe out'' your accured pto even when stated in a contract it will roll over to the next year?

Whether you have an enforceable employment contract is a significant question. Typically, unless the agreement is in writing and specifies a term of employment (1 year, etc), in Florida all you have is a piece of paper.

Fringe benefits like PTO can be provided or taken away without consquence, but if your employer has not paid you for all overtime hours worked by converting some hours to PTO, for example, that is likely unlawful.
