Legal Question in Employment Law in Florida

My previous Employer is trying to collect 2700.00$ from me, I signed a "promissory" note when they sent to to train on their equipment. The promissary note say's in the event of me leaving the company i will pay back the remainig balance. But my issue is when i left, i had to fight them for my last paycheck. They tried to keep it because of the promissary note. Like i told them it said nowhere in the agreement thay could with hold any moneys belonging to me. So they gave me my last paycheck, only my paycheck. They witheld 475$ i had in their " holiday savings" account for the Holidays wich belongs to me and they help my very last paycheck of 216$ which they are not accounting for but i have a copy of. NOWHERE does it state in the promissary note they can keep any pay owed to me, the holiday funds were my personal money put in that account to save for the end of the year. As far as i was concerned that was their payment for the 'tuition", now i get a certified letter they are attempting to collect the remaining 2700$ or they will take legal action.
Can they? And how? Please someone help

You signed a promissory note. There is nothing in your post that suggests that you do not woe what you promised.
