That should be okay as long as what you mean is they will pay you, but you just won't get a pay check until the end of the 3rd week. Usually one will be paid on the next pay day after hire. But if hired mid-way through a pay cycle (mid-way through a 2nd week of a 2 week pay cycle), it's not unreasonable to wait until the completion of the 2nd pay cycle (end of 2nd week of 2 week pay cycle) to get paid, which would be 3 weeks after hire (give or take).
