In florida, if the landlord (of a single dwelling) doesn't tell you where your security deposit is being held after 30 days can you tell them to apply it to future rent?

No. The Statute does not indicate when remedies exist. Applying security to future rent is not likely one of them. It likely is going to be imputed interest applicable to the account or waiver of right to impose lien later on or something like that.
