Landlord/Tenant security issue
Can a landlord hold the tenant responsible for replacing the carpet for the whole apartment, when the stain is just in the living room area?

It really depends on what the lease provides. Also depends on severity of the stain, condition of the carpet throughout the residence, etc.
If you feel the carpet is in good condition other than that one stain, or if you feel the stain is such that a professional cleaning would be able to remove it, then you may have a valid claim against Landlord if they refuse to return your security deposit.
