Recording and documentation of a phone conversation as evidence

Can a phone conversation be recorded with pen and paper to gather evidence to be used against me without disclosing to me the fact that it was being done or that it was part of an investigation concercing the status of my job? I was answering questions regarding an event that happened off the job but while participating in a service provided by my employee. Hence it involved coworkers and a dispute over job performance. Making a long story short, selected quotes were among documentation in what ended up being my notice of termination.

It is never illegal for one party to a telephone conversation to record, on paper, his thoughts, statements, understandings, etc. on paper, including direct quotes from the other. If the conversation is not audio-recorded, there is no violation.
