Legal Question in Personal Injury in Florida

I was recently in a car accident. A man from out of state in a rental car ran a red light. My insurance company sent an adjuster out and he deemed my car a total loss. I took it to a body shop to get a second opinion and their estimate came out at least $3000 less than the original adjusters for the cost to repair my vehicle. My car has alot of sentimental value to me and I would love to keep my vehicle. If they still deem my car a total loss, what are the laws in florida about salvaged titles? I have read that there are salvaged titles that are rebuildable and unrebuildable. How do they determine which one it is?
