We have asked our mortgage servicing company who holds our note and they refuse to give us the information, how do we get this from them?

You have the right to this information under RESPA. Send your lender a registered letter, telling them that refusing to respond is a violation of RESPA. Then hire a lawyer if you don't get the info.
