Legal Question in Real Estate Law in Florida

Our contractor began performing work on our remodeling project since April 2015. We have paid him according to schedule, and we have also paid him for work done outside of the project scope. For the last few months, the contractor has been barely showing up and has not returned our phone calls, emails, or text messages. Today, after six weeks of no response, we received an email response from our contractor telling us we need to pay him an additional $7K for work performed several months ago in order for him to continue with the project. He never mentioned we would need to pay for these "extras" while the project was in motion, and while we continued to pay him as per the contract. We feel he is bullying us into paying him more money. Do we have any rights at this point?
