If my gradfather and I are on the deed to a property together, what happens if he passes away? Being that this isn't a husband and wife situation do I own 100% of the property at that point or does his children own his 50% share?

It depends on the wording of the deed. If the deed includes words, "You and grandfather as joint tenants with rights of survivorship," then you will own the property 100% after he passes. Without the words "joint tenants with rights of survivorship," your grandfather's 50% interest in the house will pass according to his will.
