If my home for sale and under contract does not close on time due to the buyers not having their lender documents to title... what am I able to do since they are in default?

Without reading the contract, no one can answer properly. Closings usually read "on or about" which would give them a reasonable time.

Your contract controls. You need an attorney to review and represent you through this process.
