I have a lease and my landlord want me to sine a paper saying i will move out at my own expense if any more mold is found in the house we already had a mold problem and it was fixed do i have to sine this paper

You don't have to sign any additional documents other than the lease agreement you already have, unless that agreement has somehow been modified by some oral agreement that would require a writing to satisfy the statute of frauds. Mold is everywhere, including Florida. If you find mold, you need to clean the area. If you are concerned that the mold is toxic (most are not), then you can have the mold tested. If mold is such a problem that the property becomes inhabitable (not due to any action or failure to maintain on your part), then you may be able to terminate the lease. Don't do this without seeing a real estate attorney first. If you don't understand your lease, or your rights under the law, then see a real estate attorney for a review of your lease.
