I rent a vacation house. It was rented 11-09-10 to 11-30-10 by Canadians for $1,871.92. The check was deposited to my Florida bank. The renters had to leave on 11-12-10.
I have not been able to fill the remaining days.
Must I return the money?
Also, can you recommend book that has vacation rental law in laymen langue?

You seem to have several rental properties, including the one in Panama. Since you own these rental properties, you would be smart to invest in a landlord/tenant book, go to Borders and ask them for a recommendation. You should also have a rental agreement that states that once the time is reserved, that there are no refunds for early check out. The answer to your question lies in the wording of your CONTRACT. If you don't have one, you need to get one. This response assumes that you are asking about a Florida property and not your property in Panama. If the renter sues you for a refund, then you will need an attorney. At the very least, you owe them a refund of any damage deposit, assuming there was no damage done to the property.
