We have been served a summons for an ejectment, however, my boss owes me $3000 from past due pay. What do we do?

You can file a counter claim for the sums which are owed. If you were an employee than you have an attorney's fee claim you can assert. Hire a lawyer to handle the matter for you. Sounds like you may be ejected as well so get a new place to live.
