A "grantee" is the person(s) to whom something is granted -- i.e. the person(s) who are buying something or are being given something. If there is more than one grantee, the document may define them all as collectively, the "Grantee".

Typically it means that when there is more than 1 person involved in a transfer, that together they are referred to as the Grantee (using the singular tense).
