At the time a Final Summary Judgement is signed by the Judge, does a property immediately become under the control of the plaintiff in the case?

No, unless the judge directly orders it, such as in a quiet title action (absent an appeal). In a normal civil case with a money judgement the next step is that you have to execute on the judgement. This can be done by garnishment, seizure of property, or some other method.
