In Florida courts is the defendant allowed to see a copy of a filed continuation if the judge says that a continuation was filed... Because plantiff or plantiff' s witness does not show up in traffic court?

A "continuation was filed" is a phrase of legal art. In traffic court, a continuance motion is rarely written or filed and usually only by the defense attorney, if at all. Even when witnesses call the court and ask for a continuance it is generally not in writing. That said, sometimes a witness will write a letter requesting a continuance and the judge, at his discretion, could grant the continuance. You would have to look at the court file. It's public record so yes you would be entitled to see everything in your court file.
