Legal Question in Wills and Trusts in Florida

I am a freelance abstractor working in NW Florida. I am not incorporated. Will setting up a trust provide protection of my assets? I carry E&O insurance, but when I retire and don't renew my coverage, my protection for prior acts will cease also. Thank you.
