If I Quick Claimed my house over to my daughter, she files a life estate deed, can she legally take out a mortgage on the house without my signed authorization.

I am not sure what you are intending to do here. Are you planning to quit claim your property to your daughter while retaining a life estate for yourself? Or, are you quit claiming the entire property to her with the expectation she will file a deed giving you back a life estate? With either plan there are risks for you. I suggest you consult with an attorney before taking any action.
