I am not married to my significant other but want to leave her everything. What kind of will do I need?

Nothing special = just a regular will naming her the beneficiary of your estate and residuary estate.

A standard Will would do naming her beneficiary. But make sure it is done correctly because if it isn't, and the Will fails, she would get nothing.
