I am the POE and beneficiary of my recently deceased mother. Her insurance company sent her a check, with no other name on it other than hers. The check was dated for the day before she passed. Can I deposit the check in my account?

Legally no. I assume you meant POA, not POE. A POA expires upon you knowing of her demise.
Even if she was alive, the check should have been deposited into an account with her name on it, but once a bank finds out of her demise, they wouldn't accept the check for deposit there.

deposit it in her account - if you are the beneficiariy then you will get it anyway.
