does power of attorney override a quit claim deed?

You are confusing documents. It is possible, depending upon the Power of Attorney, that it can be used by the agent to convey property through a quit claim deed.

It doesn't override it, but it could be used relative to it.

I suggest you look up the definition of each of these. A power of attorney gives some the power to do something you could do. A deed transfers ownership of real property.
