If set up a will now for my pregnant wife, would I act as if we have a child or have to have a new will when the child is born?

A properly drafted Will by an attorney would draft the contingency into the document.

If you are leaving everything to your wife and then you have children, you can state that to your wife, if she survives me, and if not, then to my children who survive me. I suggest you contact an attorney as to the correct wording that you are looking for.
