Can someone be found guilty of a crime that has been abolished prior to court date?

For example, our restaurant was fined for breaking what I would consider an archaic law in regards to beverage service. Since then, the law itself has been done away with via city council, but we are being asked to still appear in court for breaking the no-longer-exsisting law. Can we still be held accountable for this even though the law is no longer in the books?

Yes. However a good lawyer might find a way to present the case, given those facts, to persuade a court to be more lenient. You've given far too few details, including what the crime was and what the penalty is to tell you whether it makes sense to hire counsel, but, as a general rule, if you have a court date, you should get a lawyer.
