what legal action can I take if my boss repeated makes me do things that go against company policy?

Is it part of your job to enforce company policy? Do you have authority to do so? Why do you believe violating company policy is grounds for a legal action? It is generally for the owners and management to enforce company policies and take action (or not) when policies are violated.

You can quit and get another job. Unless your job title is enforcement of company policy, it's not your department.
