Can a signed and witnessed notarized document stating that you own a company, the name of the company, and other entertainment entities under that company stand in place of a trademark until you can get the money to trademark?

Your question makes little sense since ownership and ownership of trademark rights are two separate things. And I don't know what you mean by "get the money to trademark." Please repost with more details or contact an attorney to discuss the situation.
