Do I need separate LLC's for each project I am doing or can I umbrella them under one?

You most likely can, and it may be the best way to protect you from liability. However, the real question is whether you should or not. You should speak with a local business attorney to discuss. There are too many variables to give you an answer here.

Frankly, you need to sit down with a lawyer (AND a CPA). There are legal and accounting reasons that may merit separate companies, and reasons you may want one LLC. In fact there may be reasons NOT to be an LLC.
