can you break a contract with a trash company if they give poor service? can they hold you to a 5 year contract with 1 year remaining?

What does the contract say? Does it have a provision that allows you to fire them?
It depends on the language of your contract, which we haven't read.
It depends what your contract says. You need to read your contract and see what its says under the paragraph that deals with termination/cancellation.
You also do not indicate when you made the 5 year contract how much time is left or any of the circumstances supporting your allegation of poor service.
I would pay a consumer law attorney to review the contract and see if you can negotiate a termination/cancellation of your contract. However, if you are nearing the end, then it may just be more cost effective to pay through the contract end. However, I would put them on notice that you do not intend to renew. Again, read your agreement to see what it says about renewal.
I have never heard of a long-term contract like this for trash service. Usually, contracts for utilities can be cancelled at any time.
