What do it mean when a court sends an order to pay funds to defendant in regards to wage granisment?

Since no one has seen the order (or the remainder of the pleadings) there is no way to tell you what it means. In other words, there is insufficient information to respond.
I have not seen the order, but think about this logically for a second. You have answered your own question. If you hold funds belonging to a creditor and the creditor has obtained a valid garnishment order, then whether you are a bank, an employer or someone holding some other money or property, then you have a duty to turn over the funds or property unless you have some reason to challenge the order.
I suggest that if you have received such an order, then you need to get to an attorney immediately so that they may advise you of your rights or responsibilities.
