What can you do when a defendant changes his llc to a new oe in the middle of a small claims law suit

You can't change an LLC to a new one, so before you address the problem, find out what actually happened. If your defendant LLC took its assets and gave the assets to a new LLC in some cases you might be able to sue over a fraudulent transfer. You would definitely want to see a lawyer to assess this.
