Two and a half years ago i paid for carpet in a man i was dating house, i never lived there he now moved someone in the house, can i take him to court and get my money back?

Since you decided to not tell us what agreement you had with him, you can't get an answer. What does him moving someone else into the house have to go with whether or not he has to pay for carpet? Unless you have an agreement that he was to repay you, it was a gift. What happened after that does not matter.
If you had a contract or note saying he would pay you back and the terms of a loan, yes. If you made a gift and changed your mind, no.
I don't know why you paid for carpet in somebody else's house. Unless you have something in writing (a promissory note, or partial repayment by the man with checks) then you made a gift to him and it will be very difficult to recover.
What I would do is send him a letter and recite the terms of your agreement. Make a demand for the funds. Send the letter via certified mail or UPS and demand a response withing 30 days. If he does not answer, you can try small claims court by filing an action in the county/state where he resides.
Small claims judges don't always follow the law and do whatever they please. Depending on what evidence you are able to produce, it is possible that a judge could rule in your favor.
